I assume you can pick which kind of fight you want to do vs your current opponent.

Exactly this. However if you and the opponent cannot come to an agreement on which styles are allowed and are not, then it's all styles allowed

 

I'm sure people will be happy to negotiate rules. But if your not willing to take the risk then that's upto you!
