75 def is a PVM level mostly. The things you unlock here: Primordials, Justiciar, DFS, Dihn, Ancestral, Wyvern shields, Serp helm, Spirit shields, Buckler.

 

These really aren't that much needed for pking. Perhaps, Dihn and Serp helm would be the best. So really depends if you want to have more pvm gear at the cost of the combat level(s)

 

As for attack, I'd keep 75 unless they release some Tier80 that makes it worth the change.

 

Lastly, get prayer 77, that's a must. You get a shit ton magic defense, defense, and magic accuracy. Worth it for bridding, getting splashed, tbing, etc.
